Jamaican Jerk Pork
Ingredients
Pork tenderloin, or 4-6 Pork chops
1/4 Cup of soy sauce
1 Tablespoon cooking oil
1 Tablespoon Ridgeline Spice Jamaican Jerk Seasoning

This seasoning blend was inspired by our trip to Jamaica. We fell in love with Jerk Chicken, and it has been a family favorite ever since. This seasoning is traditionally used as a marinade with soy sauce, but it can also be used as a dry rub. Use this spice blend to add Caribbean flavor and spice to chicken, vegetables, and soups.
Ingredients: Onion, Allspice, Black Pepper, Garlic, Cinnamon, Fennel, Nutmeg, Aniseed, Habanero, Cloves
Directions
Add the soy sauce, cooking oil, and Ridgeline Spice Jamaican Jerk Seasoning to a large Ziploc bag, or a large mixing bowl and mix thoroughly.
Add the pork to the marinade mixture. Place the Pork mixture in the fridge and allow the pork to marinate between 1 hour to overnight (the longer the better).
Tenderloin- Preheat oven to 375 degrees Fahrenheit. Place an oven safe pan on the stove and coat the bottom with a small amount of cooking oil. Turn the pan on to medium high heat and sear the sides of the pork tenderloin for 2-5 minutes to caramelize the edges. Place the pan directly into the preheated oven for 35-45 minutes until a meat thermometer placed in the center reads at least 145 degrees Fahrenheit.
Chops- Place a large skillet on the stove and set to med-medium high heat. Coat the bottom of the pan with a small amount of cooking oil. Once the pan is heated place the pork chops 2-3 at a time into the pan and cook 4-8 minutes each side. The pork should look slightly blackened this is normal.
