Sweet Bell Pepper Chicken Gravy

Ingredients

  • Chicken 4-6 pieces breast or thigh

  • Ridgeline Spice Sweet Bell Pepper Blend

  • 1/4 Cup carrots diced

  • 1/4 Cup yellow onion diced

  • 2 Cups chicken broth

  • 1/2 Cup half n half

  • 2 Tablespoons potato starch or corn starch

  • 1/4 Cup cold water

Directions

  1. Place a large skillet on the stove turn heat to medium melt 2 tablespoons of butter, or high heat cooking oil. Sprinkle Ridgeline Spice Sweet Bell Pepper Blend on both sides of the chicken, and pan fry 4-6 minutes per side until cooked all the way through. Remove chicken from pan and set aside.

  2. Put diced carrots and onions in the pan with the chicken drippings, if you’re using chicken breasts you may have to add more oil or butter. Cook the carrot/onion mixture until the onions start to look translucent.

  3. Add 2 cups of chicken broth, and 1/2 cup of half n half to the pan with the carrots and onion. Lower the heat to medium-low and stir to combine.

  4. Mix 2 Tbsp of potato starch or corn starch in with 1/4 cup of cold water and stir together until completely combined (for thicker gravy add more starch). Add starch and water mixture slowly to the pan while stirring constantly. You will see the gravy begin to thicken within 5-8 minutes.

  5. Add 2 Teaspoons of Ridgeline Spice Sweet Bell Pepper Blend to the gravy mixture, stir, and remove from heat.

  6. Serve with pan fried chicken you can cut the chicken and mix it into the gravy or serve it on top.

    This is great over biscuits, pasta, or spaghetti squash!
