Oatmeal Spice Cake

Ingredients

  • 1 1/2 Cup of all purpose flour (for Gluten Free I use Bob’s Red Mill Paleo Flour)

  • 1 Cup oats(not cooked)

  • 1 1/2 Teaspoon baking soda

  • 1/2 Teaspoon salt

  • 1 1/2 Tablespoon Ridgeline Spice Cinnamon Dessert Spice

  • 1/2 Cup unsalted butter

  • 1 Cup room temperature water

  • 1 Cup brown sugar

  • 2 Large Eggs(use an extra egg for Gluten Free)

  • 1/2 Cup Sugar

Directions

  1. Prepare a 9” by 12” baking pan by lightly coating the bottom and sides with unsalted butter and set aside. Preheat your oven to 350°F.

  2. In a large bowl mix together the flour, oats, baking soda, salt, and Ridgeline Spice Cinnamon Dessert Spice . Mix thoroughly ensuring there are no lumps.

  3. In a medium mixing bowl whisk together the eggs and sugar. Add the room temperature water and whisk together. Melt the butter and allow to cool for a few minutes then add to the mixture slowly while whisking to ensure you don’t cook the eggs.

  4. Combine the wet ingredients with the dry ingredients by mixing the egg mixture in with the flour mixture until fully combined.

  5. Pour the combined mixture into the prepared baking dish, and place the dish on the center rack in your preheated oven. Cook for 30-40 minutes. The oatmeal spice cake will be done when a toothpick inserted into the center comes out clean.

    When we served this dish growing up we called it oatmeal breakfast cake, and we had it on Sunday mornings in a bowl with milk!

    You may also serve as a cake with frosting, or this cake has enough flavor to serve alone as a breakfast treat!
