Pumpkin Bread

Ingredients

  • 2 Cups all purpose flour (or flour substitute I like to use Bobs Red Mill Paleo Flour)

  • 3/4 cup granulated sugar

  • 1 tsp baking soda

  • 2 tsp tapioca starch (can sub baking powder)

  • 1.5 Tbsp Ridgeline Spice Cinnamon Dessert Spice

  • 3 Large eggs

  • 1 Cup coconut oil

  • 15 oz pumpkin Puree

Directions

Preheat oven to 350 degrees Farenheit. Butter two bread pans 8.5"x4.5".

In a large bowl thoroughly mix dry ingredients: flour, tapioca starch, and Ridgeline Spice Cinnamon Dessert Spice.

In a second medium bowl whisk together wet ingredients: eggs, oil, sugar, and pumpkin. Make sure the sugar completely dissolves in the mixture.

Combine wet ingredients with dry ingredients, and mix thoroughly until there are no longer any lumps. Pour evenly into two prepped bread pans and bake 45-55 minutes until a toothpick inserted into the center comes out clean.
