Roasted Jerk Vegetables
Ingredients
About 4 cups of root vegetables of your choice (Carrots, Potatoes, Beets)
Soy Sauce

This seasoning blend was inspired by our trip to Jamaica. We fell in love with Jerk Chicken, and it has been a family favorite ever since. This seasoning is traditionally used as a marinade with soy sauce, but it can also be used as a dry rub. Use this spice blend to add Caribbean flavor and spice to chicken, vegetables, and soups.
Ingredients: Onion, Allspice, Black Pepper, Garlic, Cinnamon, Fennel, Nutmeg, Aniseed, Habanero, Cloves
Directions
Preheat oven to 400 degrees Fahrenheit.
Chop your root vegetables into bite sized pieces. For this recipe I like to use an even mixture of carrots, red potatoes, and beets or radishes.
In a large mixing bowl add 1/4 cup of soy sauce or Bragg’s aminos, 1 tablespoon of Ridgeline Spice Jamaican Jerk Seasoning and mix thoroughly. Add chopped root vegetables and coat with sauce mixture.
Cover a large sheet pan with foil, and a small spray coating of cooking oil. Arrange the vegetable mixture on the sheet pan, so the vegetables have some space between them. Place the cooking sheet onto the center rack of the preheated oven.
Cook the vegetable 20-30 minutes until a fork easily pierces the center of the largest vegetable. Enjoy!
