Directions

Preheat oven to 375 degrees Fahrenheit. Open chicken packaging, remove and dispose of the giblets. Place chicken on a rack in a baking pan, and tuck the wings behind the back. Pour 2 cups of water into the bottom of the pan(if you don’t have a rack then coat the bottom of the pan with a thin coat of oil, and place the chicken directly in the pan).

Cut the apple into cubes and stuff it into the cavity of the chicken. This step is optional, but this is a great trick to get the chicken to stay moist while roasting.

Mix the 2 tbsp of softened butter and the 2 tbsp of Ridgeline Spice Tuscan Seasoning together in a small bowl.

At the bottom of the chicken breast peel the skin away from the breast and use a spoon to rub the butter/seasoning mixture in between the skin and breast meat (repeat for both sides). Peel up the skin between the leg and leg meat and spoon more of the butter/seasoning mixture into the leg area. If any of the butter/seasoning mixture remains use it to coat the outside of the chicken.

Place the pan with the chicken in the preheated oven for 60-80 minutes until a thermometer inserted into the thigh reads at least 165 degrees fahrenheit. Allow chicken to rest for 10 minutes before serving.
